California Pizza Kitchen Egg Rolls
Well, my take on it. These are absolutely delicious and a must have by my family at every family function. The first time I made them it took about 1hr 15 mins. With help chopping and rolls the process is much quicker.
You will need:
1 Avocado
1 Tomato
1 bag of Monterey jack shredded cheese
1 bag out southwest premade chicken (Or you can make your own)
6 cooked pieces of bacon
1 packet of eggroll wraps
1 Egg
Olive oil
This recipe makes 9-12 Eggrolls
Start by cooking your bacon. Dice your avocado and tomato. If you prefer a big taste of avocado, then slice them sideways. Then chop your chicken into bite sized pieces. Once completed in a mixing bowl combine your chicken, bacon, tomato, avocado, and cheese into one bowl and mix ingredients. Now is time to roll your egg rolls. Lay your eggroll wrap flat and add one spoon size of filling that was just made. Take your egg and brush the outer part of the eggroll wrap for a good sealant. Now roll your eggroll wrap halfway and pull the sides in. Once the sides are pulled in complete the roll. Repeat this step until you have desired amount of egg rolls.
Turn on your stove top to the medium setting. Add olive oil into the pan. We are going to fry the rolls now. Set the rolls in the hot pan of oil. Flip to the next side once gold and brown. Repeat this process until the whole eggroll is fried. Do not forget to fry the ends as well. Complete this process with all eggrolls. Once completed Enjoy with ranch.
